A pocket-sized address on the Rue Hérold, thirty covers, one service. The chef's brief was less about decoration than about a place to be given back: that of the kitchen, usually relegated to the basement or the back room. Here it is in the window onto the street, and one reaches one's table by a gentle slope that runs alongside it. The brigade works on a stage visible from the pavement, greeting and being greeted.
The way to the dining room was treated as an opening statement: an airlock, then a narrow corridor lacquered wine red, then the small room where dinner is served. The lacquer is not perfect, and that is deliberate. The walls were not painted but given a patina by hand, by two specialists of the gesture. What matters is that the hand stays legible.
The dining room divides into three salons, two of which can be taken privately. Nothing there looks for effect or for the photograph, and no sign dates the place to 2022. The chef puts it his own way: he does not like new places, he wanted to walk into somewhere that seems always to have existed.
